SORRENTO LEMON GREMOLATA

INGREDIENTS

  • 1 bunch flat leaf parsley, finely chopped
  • ¼ cup walnuts, chopped 
  • 2 cloves garlic, finely minced
  • 1 Sorrento Lemon, zested and juiced 
  • ¼ cup extra virgin olive oil
  • 1 pinch crushed red pepper 
  • Salt and pepper

PREPARATION

  1. Combine the parsley, walnuts, garlic, Sorrento Lemon zest, Sorrento Lemon juice, and a pinch of salt and pepper in a mortar and pestle or food processor. Grind or blend until a rough paste is formed. Adjust the texture by slowly streaming in olive oil up to ¼ cup.
  2. Adjust the seasoning with extra lemon juice, salt, pepper, and crushed red pepper if desired. Then, use this as a garnish or sauce for meat, fish, or vegetables and serve with a crisp white wine.
