HAYWARD KIWI SALSA

INGREDIENTS

  • 1 medium jalapeño, seeds removed, finely diced
  • ½ medium shallot, finely diced
  • 1 large lime, zested and juiced
  • 3 Hayward Kiwis, diced
  • 1 mango, diced
  • ¼ cup cilantro, finely chopped
  • Salt and pepper

PREPARATION

  1. Combine finely diced jalapeño, shallot, lime zest, lime juice and a pinch of salt and black pepper in a large mixing bowl. Set this mixture aside for a few minutes to macerate.
  2. Gently incorporate diced kiwi, mango, and cilantro into the mixture and adjust seasoning with additional salt and pepper if desired. 
  3. Enjoy as a complement to fish or meats, or serve a snack with tortilla chips.
