Combine finely diced jalapeño, shallot, lime zest, lime juice and a pinch of salt and black pepper in a large mixing bowl. Set this mixture aside for a few minutes to macerate.
Gently incorporate diced kiwi, mango, and cilantro into the mixture and adjust seasoning with additional salt and pepper if desired.
Enjoy as a complement to fish or meats, or serve a snack with tortilla chips.
